Central American bean roasted to a colour well known in France. This dark roast is created through roasting the beans until their internal temperature reaches 240°C. (This gives the oily Sheen). The French roast comes at the point of the second crack. (A cracking noise when roasted). The first crack happens when releasing steam and the second when the bean walls breakdown and oils are released. Most coffee beans only have a single crack.
